Coverage across the mainland and the islands
Your eSIM connects to Vodafone and Wind, both on 5G. Greece has more inhabited islands than almost anywhere in Europe and the networks have done a decent job of it — Crete, Rhodes, Corfu, Santorini, Mykonos, Naxos and Paros all have solid coverage in the towns and resorts.
The smaller Cyclades and the more remote Dodecanese are thinner, and mountainous Epirus has real gaps. Beaches on the far side of an island from the main town are often the weak spot.
Ferries are the honest weak point
Greek ferry crossings are long and genuinely out at sea — Piraeus to Santorini is the better part of a day. You will lose signal in the middle of most Aegean routes, and no eSIM or local SIM changes that.

Near the ports and for the first stretch out, yes. On longer Aegean crossings you'll lose it mid-route — the distances are real. Download tickets, maps and anything you want to watch before boarding.
