Síminn and Nova around the Ring Road

The highlands are a different country
The interior is empty in a way that's hard to appreciate until you're in it. F-roads into the highlands — Landmannalaugar, Askja, Þórsmörk — have little to no coverage, and neither do the glacier approaches.
This matters more in Iceland than in most places because the weather turns fast and road closures are frequent. Check road.is and the met office before you set off rather than assuming you'll be able to en route, and don't treat a phone as a substitute for telling someone your plan.
Aurora forecasts and how much data you need

Very nearly. Route 1 is well covered for effectively its full length, as are the towns along it. The gaps are inland — F-roads into the highlands and the glacier approaches have little to no coverage from any network.
